Frazzled…
Even with help, doing our delayed Thanksgiving dinner wore my butt out…
Cooked a 19lb turkey Friday. Yesterday morning started with the sweet tater casseroles (2- One with real pecan topping, one with those marshmallows), then the corn bread dressing, then the green bean casserole…
Next was reheating the turkey, breaking out the ham, getting the spare table set up to serve from…
Folks brought munchies and desserts- two pecan pies, an apple pie, a pumpkin pie, a lemon refrigerator pie, and an English trivet.
Fed 18, and cleaned up. And I was done!!!
But, having said all of the above, it was still great to get together with folks and just enjoy the good fellowship!

Next year, we’ll all pitch in and help more. It was a wonderful evening.
Here’s a new recipe idea for you: Corn Cake muffins
1 pkg cake mix
1 pkg instant pudding
2 pkgs Jiffy mix
6 eggs
1/2 cup oil
2 cups milk
Mix for two minutes. Bake in well oiled muffin tins for 20 minutes at 350 degrees. Let stand 10 minutes before removing to a wire rack. Makes 36. Have fun trying different cake/pudding flavors.
So, turkey and ham sandwiches today? 🙂
My sister made the sweet potato dish with the marshmallow topping and it was great.
The same dish with a pecan topping?

I did 16lbs of turkey breast, and there were only two! Love me some leftovers. Back in the day, the local grocery store got to where they’d hold a 27+ lb turkey if I’d call. Though I had to pass at the 35pdr (not big enough oven.)
There is a great satisfaction when the last pan/pot/container is washed and put away, the leftovers are packed and put away, and the carcass(es) are pulled apart and put away with all the other leftover bits of bird for to be made into stock at a later time (when the next holiday’s bird carcasses are available.)

McC- Might try that, but I’ll use REAL cornmeal, not that fake Jiffy crap…LOL

John- 1/4 cup of butter softened, 1/2 cup of flour, 1/2 cup of brown sugar. Mix well with 1 cup of pecans and spread it on top. Browns up nicely and compliments the taste of the sweet potato cassarole.
Jet- Spread out over three tables…LOL
Beans- Sigh… yeah… I needed a bigger dishwasher!
